Pancakes!

Yes, pancakes.  Easy to do, delicious and homemade.  A wonderful breakfast for a rainy Saturday morning in Suisun City.  The sour milk adds a bit of tang.

1.5 Cups regular Flour (not bread flour)
2 teaspoons Baking Powder
1/2 teaspoon salt
Stir, stir, and  stir
1 Egg
2 Tablespoons vegetable oil (NOT OLIVE...silly!)
Milk to make it wet and a smooth pour. 
Mix well but don't overdo the mixing. Let it be a bit lumpy.

Heat a griddle or skillet til drops of water do a water dance on top...about 375 degrees.

Pour to size you wish, do not tamp down, just watch, when the bubbles on the outside start to dry, flip it over, do not tamp it down.  Wait a bit til you see brown around the edges...pull it! Do it again til all gone.  Add nuts or berries or both if you like.  Serve with butter and REAL maple syrup!
